This refreshing citrus salad is designed for the active individual who demands both nutritional density and elevated flavor. Its versatility makes it an ideal companion for days spent poolside or as a refined contribution to summer gatherings. With durable ingredients and a quick assembly, it is a seamless option for those on the go who refuse to compromise wellness for convenience. Whether served as a standalone lunch or paired with a clean protein, this salad is a reminder that the most impactful habits are often the simplest ones.

Ingredients

For the Salad:

  • Mandarin Oranges: Approx. 2 cups of slices (from about 4–5 fresh mandarins or 1 can, drained).
  • Mixed Baby Greens: 5 ounces (spring mix, baby spinach, arugula, or baby kale).
  • Dried Cranberries: 1/3 cup.
  • Almonds: 1/2 cup (chopped, slivered, or sliced).
  • Goat Cheese (Optional): 1/4 cup crumbled.
  • Salt & Pepper: To taste.

For the Lemon Dressing:

  • Olive Oil: 1/4 cup.
  • Lemon Juice: From 1/2 a lemon.
  • White Wine Vinegar: 1 Tbsp.
  • Garlic Powder: 1/2 tsp.
  • Salt & Pepper: To taste.

Instructions

  1. Prep the Oranges: If using fresh mandarins, peel them and remove as much of the white pith as possible. If using canned, drain them thoroughly.
  2. Make the Dressing: Combine the olive oil, lemon juice, vinegar, garlic powder, salt, and pepper in a small jar or bowl. Whisk or shake until well combined.
  3. Assemble the Salad: In a large bowl or on a platter, lay down the baby greens as your base. Add the mandarin slices, dried cranberries, and almonds.
  4. Toss and Serve: Drizzle with the dressing right before serving and toss gently. If you are using goat cheese, sprinkle the crumbles over the top after tossing to keep the salad light and crisp.

Tips for Success

  • Texture: If you like extra crunch, toast the almonds in a dry pan for 2–3 minutes before adding them to the salad.
  • Make Ahead: Keep the dressing and the oranges in separate containers in the fridge if you aren’t eating right away. This prevents the greens from wilting.

The Perfect Pairings

While the Bright Citrus Salad is a standout on its own, it also serves as a versatile foundation for a complete, protein-forward meal. To maintain the light, summer-ready profile of the dish, consider adding one of these clean pairings:

  • Citrus-Marinated Grilled Chicken: Lean chicken breast marinated in lemon, garlic, and a touch of honey mirrors the brightness of the vinaigrette and adds a satisfying, iron-rich element to the bowl.
  • Chilled Garlic & Herb Shrimp: For a refined, poolside-friendly option, top the greens with chilled jumbo shrimp. The snap of the protein pairs beautifully with the crunch of the toasted almonds.
  • Honey-Glazed Atlantic Salmon: The healthy fats found in salmon complement the acidity of the mandarin oranges, creating a nutrient-dense meal that supports sustained energy and recovery.
